Raw Vegan Christmas Cake Recipe

Struggling to find a healthy cake recipe for the holiday season? We at Dr Gaye HQ made this non-baked, very English, raw vegan Christmas cake! It's made of figs, dates, pecans, almonds, cashews, sultanas, raisins, carrots, courgettes, apples and of course, LOVE! We love it and hope you will too.

Raw Vegan Christmas Cake

Everything's ready it's time to make a most spectacular christmas cake
Currants, raisins, sugar and spice will make it ever so nice
Cherries and nuts and almond paste, these will give it a Christmas taste
Everyone in the family must stir it twice

Raw Vegan Christmas Cake - ingredients

Raw Vegan Christmas Cake

100g grated courgette
200g grated carrot
100g grated apple
150g raw soaked almonds
140g pecans
220g dates
75g raisins (you can soak these in brandy or rum)
75g sultanas (you can soak these in brandy or rum)
75g goji berries
Zest 1 orange and 1 lemon
4 heaped tbsp slivered almonds
2 tsp cinnamon
2 tsp all spice
¼ tsp nutmeg
½ tsp crushed cloves
2 tbsp coconut oil, softened

Raw Vegan Christmas Cake - blended wet ingredients

Blend pecans, dates and citrus zest in a blender. Grate courgette, carrots and apple and after squeezing the water out add them to the blender and blend until it becomes a wet mixture. Stir in all other ingredients until fully mixed and pour into a tin to set in the fridge.

Cashew Cream Icing

250g cashews
150ml water
1 tsp vanilla
½ tsp almond essence
2 tbsp coconut sugar
2 heaped tbsp coconut oil

Blend until perfectly whipped and creamy. Spread over top of set cake and return to fridge to set. Ready to serve after 12 hours.
