Summer’s just around the corner… but for now, heirloom carrots are still in season and they’re a great alternative to the typical orange kind. In fact, before the 17th century, almost all cultivated carrots were purple! The dark pigments are from anthocyanins which you’ll find in other dark-coloured fruit and veg which have more antioxidants than other varieties.
The beta-carotene content is great in orange carrots, but the yellow ones are high in lutein – also great for eye health but a different type of carotenoid. So, it’s good to have colourful carrots since each colour features different nutritional benefits. Eat and juice the rainbow!
